Drawing on his experience at Echaurren, he explores the creative potential of offal through a contemporary lens, combining memory, knowledge and creativity to transform the ordinary into something innovative.

It is a reflection on the 'invisible larder' — everything that remains hidden from plain sight yet forms part of our culinary heritage. This perspective invites us to discover new possibilities in what has always been right in front of us and to recognise that innovation in gastronomy can also stem from our roots.
