Javi Estévez, La Tasqueria* (Madrid), will show us new approaches to one of the key elements of traditional cuisine: offal. At the age of 40, Javi has been working professionally in the kitchen for more than three lustrums. Known for his participation in the first edition of Top Chef Spain in 2013, as well as his revelation as a chef in 2016, Javi will share the secrets that have allowed La Tasquería to keep its Michelin star since 2019.
