Olleros's experience with the land around his restaurant will be key in this presentation.
The Galician chef will talk about how to integrate produce from vegetable gardens and greenhouses into a restaurant's approach and dynamics. He will tell us about his experiences and talk about his misgivings, his successes and the steps he is taking to break down the barrier between cooking and nature and vice versa.
