A way has been found to soften products that on their own were not considered the most suitable, by using marinades with salt or sugar, yoghurt or honey in various recipes from around the world.

Andreu Genestra will give us a brief tour of the techniques that can help us to this end with the help of our recipe book, not only in relation to meat but also with products from the sea, breaking down vegetable fibres as well as those of animals.
