Smoke kitchens as a nervous system

Just as the nervous system helps to coordinate our body's motor actions and maintain synergy, so do smoke kitchens, as they are known in the villages of Oaxaca.
A fire is lit using firewood to heat the griddle, which will receive the initial stimulus along with many other elements: tortillas, which will be used as food or a side dish; tomatoes, which will form the basis of a sauce; and chillies, which make this whole process worthwhile.
Barrios explores the vitality, meaning and tradition of this system and culture of work in the villages and homes of Oaxaca.
