Traditional Swedish cooking techniques in a modern restaurant

This session will explore how traditional Swedish cooking methods such as smoking, preserving, fermenting and open-fire cooking can be incorporated into modern professional cuisine.
Niklas will discuss the cultural significance of these techniques, why they are at risk of disappearing and how wood fire can be used to incorporate them into a contemporary context while preserving their authenticity. He will demonstrate how harsh northern climates have shaped Swedish culinary traditions, and explain how these challenges have influenced the techniques he uses at his Stockholm restaurant, Ekstedt.
