Seafood cuisine from discards
All of the dishes offered by Sergio Ortiz de Zarate at his restaurant are based on fish, seafood, seaweed and other marine products. However, he and his team are increasingly introducing what could be considered by-products of the sea, such as hearts, livers, scales, skins, bladders and fins.
