Benito Gómez will come to San Sebastián to dispel the myth of km 0. 0, talking about his vision of local ingredients and products and the need for them to become 'distant' in order to have economic viability and survive.
We will also explore how using ingredients that travel more than 1,000 km to reach our tables can enhance variety and quality, meeting the demands of our customers.
