Nino Redruello

Chef at Fismuler (Madrid, España)

Gastronomy to be shared and enjoyed among friends, colleagues or lovers of good food. Nino Redruello enjoys food and the experience of cooking, and reflects the pleasure he gets from this in his culinary proposals.

The fourth generation of a family devoted to gastronomy in Madrid since 1919. Nino Redruello (Madrid, 1978) has been working in the kitchen since he was 15. His passion for cooking was forged by spending summer after summer at La Ancha, the first restaurant that the family opened, and by internships and jobs later on in restaurants like Arzak, Zuberoa, elBulli or Akelarre in Spain, and Lindsay House in London or Abacanto in Bergamo, Italy. In 2005 he decided to go into business by opening Las Tortillas de Gabino, and in 2009, La Gabinoteca, one of the first gastro-pubs in Madrid.

In 2015 he started, together with his fellow-chef, Patxi Zumárraga, to work in the gastronomic consultancy business with the opening of Tatel Madrid. In 2016 he also opened Fismuler Madrid with Zumárraga. This is a Nordic-style premises, with long tables, rough wood, bare walls and fresh natural food. In 2018 he opened a second Fismuler in Barcelona.
