Acánthum Restaurant (Huelva)

He trained in Huelva for 7 years and, after working at various restaurants and Arzak for two years, he started Acánthum in 2011, the first gourmet restaurant to open its doors in the province of Huelva.

He has received many awards: winner of the “Best Tapas in Huelva” contest; Young Entrepreneur Award from the magazine “Ejecutivos”; Best Restaurateur of Andalusian cuisine from Facyre and the Entrepreneurial Initiative Award from the Huelva Association of Young Entrepreneurs. In 2013, he was nominated for Best New Restaurant at the Madrid Fusion International Gastronomy Summit, recognised as Entrepreneur of the Year by the Huelva Federation of Entrepreneurs and became the first restaurant in the history of the province of Huelva to receive a sun in the Repsol Guide. In 2014, Acánthum received the award for the best dining room service in Andalusia.

In 2015, he won the International Cooking Award with ‘Jaén Paraíso Interior’ Extra Virgin Olive Oil at the Madrid Fusion Summit.

By 2015, he received the first Michelin star awarded to a restaurant in Huelva in the history of the Red Guide.

In 2016, he was appointed ambassador of gastronomy for Huelva and awarded 2 suns in the Repsol Guide. Finally, Xanty Elias received the Gold Medal from the province of Huelva.

He is a provincial delegate and member of the National Directive of the European Association of Chefs (Euro-Toques).
