Trigo Restaurant (Valladolid)

Trigo opened its doors in 2007. Chef Victor Martín and his wife, Noemí Martínez, a sommelier and maître d’, have spent more than ten years shaping a dream… a lively, contemporary menu with a traditional base, which is supplied from the rich pantry of Castile and Leon and the best seasonal products.

Victor develops dishes full of nuances with consistent bases full of flavour. The cooking points, textures and high quality of the raw materials stand out in their tasting menus, where technique and classic recipes come together in each dish.
Víctor (1972), with his lifelong passion for cooking and devotion to his homeland, studied at the Madrid and Santiago de Compostela Catering Schools. Before starting up the family business, he worked with Santi Santamaria in the Racó de Can Fabes in Barcelona and Sant Celoni in Madrid. Another important stage in his training took place in Catalonia, in the restaurants Àbac, Rúcula and Fonda Sala.

Trigo earned his first Michelin star in 2018. He also has two Repsol suns. He was a finalist in the 2009 Best New Restaurant at the Madrid Fusion International Gastronomy Summit and finalist for the Chef Millésime Award in 2011.
