Solla Restaurant (Poio)

He has a degree in Business Administration ad is a self-taught cook at the family restaurant, Solla. He started working at the family-run restaurant, Solla, in 1991, combining the completion of his academic studies with his training at the restaurant, starting his work in the dining room, which is why he began in the world of tasting and as a sommelier. He was Galician Sommelier Champion and came 6th in the national contest.

In 1995, he began his cooking training by combining the role of head waiter and assistant chef at the restaurant, and doing some additional courses.

In 2001, he founded the Nove Group. In 2003, he took over the property of the family restaurant Casa Solla. From 2004 to the current day, he has constantly taken part as a speaker at various national and international gastronomic events. In 2010, he represented Galicia at the Shanghai Expo. In 2007, he received the Dagda HG&T Award, Best Professional Cook in Galicia. In 2008, he got the Caldereta 08 Award, the Diario El Comercio, Gijón, Asturias and the Dionisio Duque Foundation Award, Segovia.

He currently still continues to receive top ratings from the community in national guides, Michelin (1 star since 1980), Gourmetour, Repsol…
