Deniz Sahin – Kiva & Bomonti (Istanbul, Turkey)

A vocational chef with a broad background of training in Turkey’s various culinary styles, Deniz is the wife of the factotum of traditional Turkish cuisine Adnan Sahin. She is the executive chef at the Kiva and Bomonti restaurants. Deniz is a chef of rare subtlety and sensitivity in interpreting meze and Ottoman cuisine and she represents true authenticity in the age-old traditions of Turkish cooking.

Cuneyt Bey – Günaydin (Istanbul, Turkey)

This butcher, chef and showman is considered the grand master of the Turkish kebab (the original). His almost circus-like skills in cutting meat and vegetables and his deep knowledge of his products have led him to star in various TV shows in Turkey, and enabled him to build up an empire of 55 restaurants all over the world (Turkey, London, New York, th UAE, etc.).

His family were butchers, and he began to work in the family business at the age of 14. He now has impressive holdings covering four different concepts, ranging from butcher’s shops to gourmet burgers, doner kefta and, of course,  kebab houses.
