This year, the San Sebastian congress celebrates its 20th anniversary. It is an anniversary which also practically coincides with the explosion of contemporary Spanish cuisine, which was a generator and great disseminator in our country and throughout the world.

To reflect on these two prodigious decades and on the evolution of avant-garde cuisine, San Sebastian Gastronomika – Euskadi Basque Country has put together a round table-colloquium with the participation of guests who have played a crucial role on this “journey”.

It features José Carlos Capel, Rafael García Santos, Benjamín Lana, Joan Roca and Quique Dacosta and is chaired by Pau Arenós.

These great people will analyse the evolution of avant-garde cuisine over the last 20 years, draw up a map of its current state and, from there, undertake a prospecting exercise to look at possible future lines.
