Gallery by Chele Restaurant (Manila, Philippines)

From an early age, Chele González loved to cook. Born in Torrelavega, Spain, he obtained a degree in gastronomy in Artxanda, Bilbao, before working in some of the world’s most renowned restaurants, such as Andra Mari, Arzak, El Bulli, El Celler de Can Roca, Nerua-Guggenheim and Mugaritz. He developed his culinary foundations in Europe. Then he travelled all over the world, especially through Asia and the Philippines, where he conceived his philosophy and modern approach with local, sustainable ingredients to create innovative dishes.

In 2013, he became the chef and owner of the award-winning restaurant Gallery VASK in Manila, Philippines. Gallery VASK was acclaimed as the Best Restaurant in the Philippines in 2016 (no. 39 in Asia) and 2017 (no. 35 in Asia) by Asia’s 50 Best, included as one of the six inspirational restaurants in Australasia and South-east Asia by The World’s 50 Best Diners Discovery Series in 2015, recognised as one of the 20 Best Restaurants between 2016 and 2018 and the Best New Restaurant of Creative Cuisine in 2014 by Philippine Tatler and Restaurant of the Year by Esquire in 2014. In 2018, Gallery VASK underwent a major renovation to become Gallery by Chele.

Since he launched his project seven years ago, Chele has strived to find new ingredients, flavours and ways of understanding food. The legacy and philosophy of Gallery VASK lives on with the co-owners: the architect and artist Juan Carlo Calma and chef Carlos Villaflor.
