Between October 6 and 9, 2019, San Sebastian Gastronomika-Euskadi Basque Country will hold its 21st edition, commemorating the 500th anniversary of Juan Sebastián Elkano’s route when he circumnavigated the world for the first time.

To do this, chefs from Brazil, Argentina, Chile, Indonesia and the Philippines, countries crossed by the expedition, will come to San Sebastián to demonstrate the diversity of cuisines in a unique round-the-world tour of aromas and flavours.

 Joan Roca, Dani García and Ángel León, together with Andoni Luis Aduriz, Josean Alija, Hilario Arbelaitz, Juan Mari Arzak, Eneko Atxa, Martin Berasategui and Pedro Subijana, the members of the technical committee, will offer their new lines of work on stage of the Kursaal.

From October 6 to 9, San Sebastian Gastronomika-Euskadi Basque Country will hold its 21st edition, dedicated to commemorating the fifth centenary of the journey undertaken by Juan Sebastian Elkano from Seville-Sanlúcar de Barrameda to complete the first round-the-world trip by boat three years later. It was a voyage that empirically demonstrated theories that argued that the world was round against scholarly theories.

San Sebastian Gastronomika-Euskadi Basque Country 2019 will be a contemporary mirror of that feat, bringing together the cuisines and products that those sailors discovered during their three-year voyage. A unique round-the-world tour of aromas and flavours from all over the globe that will present everything from culinary tradition to the latest trends of the participating chefs and countries.

To this end, Gastronomika 2019 will also start with Elkano, in this case the Elkano Restaurant run by Aitor Arregui in Getaria, and then go down to Andalusia and set sail in search of flavours following the original route: the Canary Islands, Brazil, Argentina, Chile, the Philippines, Indonesia, before returning to the Basque Country. The gastronomic tour will also feature illustrious guests from other parts of the world, such as Romain Meder from Plaza Athénéé (Paris, France) and Monica Galetti, from the Mere Restaurant (London, UK) to dig deeper into Elkano’s global idea.

Never-before-seen exoticisms and customs, unknown chefs and big stars. A melting pot of planetary culinary experiences that will come together in the capital of Gipuzkoa from October 6 to 9, which will once again be hosted by the team of Basque chefs as hosts – Andoni Luis Aduriz, Josean Alija, Hilario Arbelaitz, Karlos Arguiñano, Juan Mari Arzak, Eneko Atxa, Martin Berasategui and Pedro Subijana, together with Roser Torras, the technical committee.

Following Elkano’s route, the following will be taking part at this year’s Gastronomika: Najat Kaanache, Nur (Fez, Morocco); Diego Schattenhofer, 1973 Taste Restaurante (Santa Cruz de Tenerife), Bel Coelho, Clandestino (Sao Paulo, Brazil); Jefferson Rueda, A Casa do Porco (Sao Paulo, Brazil); Carolina Bazán, Ambrosía (Santiago de Chile, Chile); Kurt Schmidt, Restaurante 99 (Santiago de Chile, Chile); Sau del Rosario, 25 Seeds (Ángeles, the Philippines); JP Anglo, Sarsa (Manila, the Philippines); Kevin Cherkas, Restaurante Cuca (Bali, Indonesia) and Ray Adriansyah, Locavore (Bali, Indonesia).

In addition to the technical committee, Spain will be well represented with the presence of the multi-Michelin-starred chefs Oriol Castro and Eduard Xatruch, Disfrutar (Barcelona); Joan Roca, El Celler de Can Roca (Girona); Begoña Rodrigo, La Salita (Valencia); Ángel León, Aponiente (El Puerto de Santa María); Maca de Castro, Restaurante Maca de Castro (Mallorca); Fina Puigdevall, Les Cols (Olot) and Dani García,  in what will be his last appearance at a congress as head chef of the Dani García Restaurante (Marbella) with was recently awarded three Michelin stars.

With registrations now open, from October 6 to 9 San Sebastian Gastronomika-Euskadi Basque Country will complete in colour what Elkano started in 1519; Gastronomika will complete the Elkano route with flavour.
