Up to eight chefs with three Michelin stars will pay tribute to Carme Ruscalleda at one of the star dinners at the congress. The inauguration on Sunday 6 will feature Getaria and its venues.

Along with these, other unique activities will also be scheduled away from the main stage of the Kursaal as part of San Sebastian Gastronomika 2019.

In a week’s time San Sebastian will once again play host to San Sebastian Gastronomika-Euskadi Basque Country, the congress that will be the focus of world gastronomic interest, all the more so this year as it commemorates the 500th anniversary of the first circumnavigation of the earth. To celebrate this, chefs and offerings from the countries through which the Basque sailor Juan Sebastián Elkano travelled will come to San Sebastian, to a congress that will once again be attended by the Spanish gastronomic elite. Dani García’s last presentation as a three-starred chef

On the first day of the congress, Monday October 7, Dani Garcia will take to the stage for the last time as a three-starred chef. The Andalusian, who will close his restaurant Dani García in Marbella on October 22, will take to the Kursaal stage to describe his latest innovations in the front line of gastronomy. It will be a unique opportunity to listen to the last chef to receive three Michelin stars from the Iberian Peninsula.

The inaugural dinner and tribute to Carme Ruscalleda

As usual, the day-to-day business of the congress is rounded off with a number of evening dinners, two of which stand out: the inaugural dinner, and the one that Ángel León, Joan Roca, Jordi Cruz, Eneko Atxa, Juan Mari and Elena Arzak, Pedro Subijana and Martín Berasategui (all with 3 Michelin stars) will prepare on Monday at the Basque Culinary Center to honour Carme Ruscalleda, who will receive the Tribute Award from the congress during the day in the auditorium. Before that, on Sunday, the congress will have held its inaugural dinner, this time with Getaria in the limelight. In a dinner planned by locations, Gorka Lascano (Astillero), Aitor Arriegui (Elkano), Enrique Fleischmann (Txoko Getaria), Markel Iribar (Balearri) and Igor Arriegui (Kaia- Kaipe) will demonstrate the taste of the town’s grills.

1st Pintxos and Tapas Congress

One of Gastronomika 2019’s great novelties. On Wednesday morning, Nandu Jubany (Can Jubany, Barcelona), Enrique Fleischmann (Txoko, Getaria), Nacho Manzano (Casa Marcial, Prendes) and a number of other professionals from the sector will hold a congress within the congress, a day to promote and move forward in the increasingly busy sector of tapas, pintxos, bars and new miniature culinary formats in general. During the course of the event, the 1st Keler Bar of Bars Award will be presented to the Bokado bar in San Sebastian.

The Legacy of Elkano

The presentation at Gastronomika that will link 500 years of history will begin with the reading of Juan Sebastian Elkano’s testament. On stage, five of Getaria’s best grill chefs accompanied by historians will explain how the two grills bequeathed by the sailor in his last wishes marked the starting point of one of the most established traditions in peninsular gastronomy. The profession of grill chef will be promoted on the stage on Tuesday.

The best grilling and potato salads

The grill continues and will continue to be part of the congress, as the National Grilling Competition faithfully returns to the event on the terrace of the Kursaal. The event, which showcases a map of the best meats and grill chefs in the country, will celebrate its 10th anniversary with a large-scale group tasting. The competition, which recognises the best potato salad tapa, will find a successor to Carles Abellán’s Tapas 24 as the home of the best potato salad in Spain. The 2nd National Potato Salad Championship – San Miguel will be judged on Tuesday 8, while the National Grilling Competition will take place on Wednesday 9.

The challenge of the dining room. Keys to the future from the perspective of Basque sensibilities

Human relationships in a restaurant’s dining room. Asun Ibarrondo (Boroa, Amorebieta), José Antonio Ramos (Bilbao Berria, Bilbao) and José Ramón Saizar (New Sansse, San Sebastián), three professionals from the dining rooms of different types of Basque restaurants, will put forward their opinions in a presentation about service on the last day of the congress. The opinions of them all will be moderated by another great of the dining room, in this case a Catalan: the former sommelier of elBulli, Ferran Centelles.

The home of networking

San Sebastian Gastronomika-Euskadi Basque Country would not be the same without its Market, an ideal networking area with the best national and international products and exhibitors from around the globe to showcase the latest industry trends. This year, 5000 m2 of exhibition space will be filled with up to 170 companies promoting sharing every day from 10 am to 8 pm (7 pm on the last day).

Gastronomika for Teenagers

The activity that Gastronomika and Eurotoques dedicate to the youngest attendees will change its format this year. Guided by KOENNA (a group of young entrepreneurs from MTA, Mondragón Team University), the schoolchildren from Gipuzkoa taking part will travel with Elkano on his journey around the world by means of gastronomic questions to be solved using tablets. After the theory, they will go on stage to cook with Fernanda Fuentes and Andrea Bernardi (Nub*, La Laguna, Tenerife), Joaquin Felipe (My Way, Madrid), Verónica Muñoz (Adolfo, Toledo), Enrique Pérez (El Doncel*, Sigüenza) and Mario de Lucas (Lino, Guadalajara).

S.Pellegrino and pairings with Fina Puigdevall

True to their commitment to haute cuisine and San Sebastian Gastronomika, S.Pellegrino and Acqua Panna will once again host a menu for the stars with a banquet presided over by chef Fina Puigdevall (Les Cols**, Olot). The chef from Girona will set out a solid blueprint for lunch and the liquid will flow as usual courtesy of the president of the Spanish Sommelier Academy, Juan Muñoz. It will take place on Tuesday, October 8 at the Ni Neu restaurant in the Kursaal.

The new era of Ribera del Duero

Now that wineries have shown the world that Ribera del Duero wines are an example of excellence, new benchmarks are being set. Because there is no place in a DO (Designation of Origin) for conformity, the standard required is very high, there is a continuous reinvention and there are always goals to be achieved. The presence of a Designation of Origin in San Sebastian Gastronomika will make it clear that the objective in Ribera del Duero is not only to make wine, but also to make history, which is why they promise surprises both in their activity and in their presentation in the auditorium on the first day of the congress.

As happened last year, congress delegates and gourmets will enjoy discounts on any purchases they make at San Sebastian Gastronomika to promote enjoyment at the congress. For activities costing 40 euros (the majority of those that are paid for) a 30% discount will be applied for the purchase of three, and 40% for the purchase of more than four. Gastronomika 2019 travels with Elkano on the 500th anniversary of his circumnavigation of the world

Between October 6 and 9, 2019, San Sebastian Gastronomika-Euskadi Basque Country will hold its 21st edition, commemorating the 500th anniversary of Juan Sebastián Elkano’s route when he circumnavigated the world for the first time. To this end, Gastronomika 2019 will also start with Elkano, in this case the Elkano Restaurant run by Aitor Arregui in Getaria, and then go down to Andalusia and set sail in search of flavours following the original route: the Canary Islands, Brazil, Argentina, Chile, the Philippines, Indonesia, before returning to the Basque Country.

The gastronomic tour will also feature illustrious guests from other parts of the world, as well as the finest constellation of Spanish chefs.
