Aitor Zabala (born in Barcelona in 1979) is a Catalan chef of Basque origin who is internationally recognised for his avant-garde and narrative cuisine. After training at the Hofmann School, he worked in renowned establishments such as Akelarre, Arzak and ABaC, and was a member of the creative team at elBulli from 2006 to 2009 under Ferran Adrià's direction.
In 2010, he relocated to the United States to collaborate with José Andrés on gastronomic projects at ThinkFoodGroup. In 2018, he opened his own restaurant, Somni, in Beverly Hills, which soon earned two Michelin stars. Following its closure due to the pandemic, the restaurant reopened in 2024 as Somni 2.0 in West Hollywood.
In June 2025, Somni was awarded three Michelin stars, making Zabala the first Spanish chef to receive this distinction outside of Spain. His cuisine is characterised by creativity, technical skill and an emotional depth that transforms each dish into an immersive experience.
