Thomas Troisgros is the fourth generation of chefs in his family. His grandfather, Pierre Troisgros, was one of the founders of nouvelle cuisine, and his uncle, Michel, is the head chef at Maison Troisgros***. Thomas also observed his father, Claude Troisgros, who is one of the most renowned chefs in Brazil and the world. At the age of 19, Thomas moved to the United States, where he graduated from the Culinary Institute of America. He then worked with Daniel Boulud, Andoni Luis Aduriz and Arzak.
In 2005, he returned to Brazil at his father's request to take over the 66 Bistro. He soon took over the kitchen at Olympe, a restaurant founded in 1984 which is renowned for its blend of French techniques and Brazilian ingredients with a contemporary twist.
In October 2023, the chef opened his new solo venture in an Ipanema mansion: Toto, the nickname given to him by his grandfather, Pierre, as a mark of affection. The restaurant aims to embody the style of Parisian 'neo-bistros'. In February 2024, Oseille opened on the second floor. The name means 'sour' in French and refers to a classic Troisgros dish. The restaurant was awarded a Michelin star in 2025, just one year after opening.In September 2024, Thomas and his wife opened their first bar,Diana Litewski, called Tijolada, also in Ipanema.
