Mitsuharu ‘Micha’ Tsumura is a Peruvian chef of Japanese descent, combining the culinary and gastronomic roots of Peru with the best of Nikkei culture in his recipes.
Micha Tsumura's most personal project lies at the heart of Lima: the Maido restaurant, an absolute benchmark for Peruvian and Nikkei cuisine worldwide. Throughout its 15-year history, Maido has garnered countless awards. In June 2025, it received its highest accolade to date: Maido was named Best Restaurant in the World by The World's 50 Best Restaurants.
Micha's cuisine is full of powerful yet delicate and balanced flavours. Through his dishes, he invites us to travel across Peru, exploring the sea and the Amazon, the pillars of his pantry. With the desire to show the world the cultural and gastronomic richness of his country, he published the book Nikkei es Perú and participated as a gastronomic advisor in the Netflix documentary Perú, tesoro escondido.
In addition to Maido, Micha successfully leads other gastronomic projects. In Lima, he runs Tori, with establishments in different parts of the capital, and outside Lima, in Panama, Mai Mai Restaurant, and in Chile, Karai by Mitsuharu.
