CUISINE WITH SPICES

The new great challenge for San Sebastian Gastronomika – Euskadi Basque Country 2017 is India. Mysterious, fascinating, magical, unknown, exotic, infinite. A country which is a continent and a culture that is a whole world of cultures. Ethnic contrasts, landscapes of amazing diversity and many types of cuisine, as many as the cardinal points and different civilisations that have passed through it.

A dizzying trip with amazing stops for popular cuisine, the rich “street food”, the tandooris and biryanis, the spices, the explosion of vegetables, the infinitude of breads, the complexity of pulses, the endless curries, dairy products, coconut, fish and seafood, lamb and meat…

An overview which is both comprehensive and at the same time individual will bring us closer to the secrets of these ignored regional and religious cuisines, to the grand dishes of royal palaces, monumental historical recipes, culinary hybridisation with the West and, of course, to new Indian cuisine, the result of the meeting between a thousand-year-old tradition and the latest avant-garde movements.

We have never had this opportunity before in Spain and so it will be at San Sebastian Gastronomika-Euskadi Basque Country 2017 for the first time.
